

Vegan food is anything but boring and this is testimony to that fact: marinated tofu in rice wine vinegar and chilli that will delight the taste buds and fill you up. Perfect with stir-fried veg or on top of greens/ salad, go wild with this punchy vegan dish and enjoy!
What you’ll need

Ingredients:
- 6 tbsp rice wine vinegar
- 4 tbsp dark soy sauce
- 2 tbsp sesame oil
- 1 tbsp mild olive oil
- a sprinkle of granulated garlic or 2 gloves of finely chopped garlic
- a sprinkle of red chilli flakes
- 1 pound tofu
Method:

Mix all the ingredients bar the tofu in a bowl or whisk in a blender. Cover the bowl with foil and refrigerate for an hour or overnight ideally. Pour over the tofu and oven bake at 190°C for 6 minutes.
Serve with veggies or over rice noodles for the perfect plant-based lunch or supper. I rarely ate tofu pre going vegan bar the odd miso soup but it’s delicious and takes on any flavour you pile on to it so makes a wonderful basis for any meal.
Even if you’re not vegan (my kids and husband aren’t), they love this dish. I just don’t add the chilli for the little ones!
