I’m a little bit, make that a massive bit, obsessed with smoothies right now (damn you Instagram with all your slick smoothie ways) but they’re just so damn quick and easy and not forgetting super healthy and delicious too, why would anyway so no to a smoothie?! Why I ask you?! Never trust that person is all I can say!
What’s more, smoothies are perfect on the run first thing be it the school run or an actual run, the latter I’ve been trying to do when possible, most days, jumping on my trusty treadmill in the garage when the weather lets me down (every day then) or running around the block first thing just so it’s over and done with.
I do love a good run though it’s just I’ve lost track of the times I get to the end of the day rocking full gym kit having only walked from the kitchen table to the fridge and back again for cardio. Nil points Vix.
Anyway, I digress…these bad boys here are actually good boys. Very good boys. The kind of boys you take home to meet your mum and marry asap. These are the smoothie equivalent to my husband, Peter. Hi Pete if you’re reading this (you better be reading btw).
Anyway go make these immediately. Actually not immediately, make sure the coconut milk in the recipe is as cold as possible first. I like to refrigerate mine as the cream in the tin rises to the top, separating from the coconut water below which doesn’t really matter as you’re bunging the whole thing into a blender but my theory is it makes the smoothie creamier plus I like to dip my finger into the creamy top and eat it straight from the tin. Lush.

Plus the colder the ingredients the colder the smoothie and no one likes a warm smoothie!

Ingredients
(makes 2 tall glasses)
- 1 tin full fat coconut milk (use low fat if you like/organic or standard milk for a non-vegan version)
- 1 ripe banana
- Big handful of blueberries and strawberries (fresh or frozen)
- Dollop of maple syrup (or non vegan honey)-alter to taste
- Sprinkle of cinammon
- 1/2 glass of water
Method
Put everything together, blend for 30 seconds, add ice and slurp with a stripey straw just like Pinterest wants you to 😉
