My youngest child is obsessed with calamari and while I don’t eat it as I’m vegan, I like to share what the whole family enjoy, here.
This is my Dad’s recipe.
Ingredients:
1 tbsp sea salt
4 tbsp plain flour
4 tbsp cornflour
400g squid tubes, washed
Vegetable oil for deep frying
Lemon and lemon wedges
Black pepper
Cayenne pepper
Parsley stalks
Method:
Mix the plain flour and corn flour with the sea salt. Cut the squid tubes into rings with a sharp knife. Fill a large pan with vegetable oil. Dip the squid rings into the flour, shaking off excess flour and fry for 2-3 minutes until crispy and golden.
Squeeze lemon over the rings and sprinkle with cayenne and black pepper. Garnish with parsley stalks and lemon wedges.
