These delicious toasted oats are not only fun to make (I love a bit of pan swivelling) but the process is incredibly therapeutic too, so much so, I find baking full stop the biggest of stress-relievers.
It takes time to toast the oats in the pan which requires patience and switching off, and I tend to make big batches so they last all week.
I think you’re going to love them too.
I’ve paired the oats with coconut yoghurt, berries, banana and passion fruit for sweetness and fibre.
Here’s what you need to rustle it up:
Ingredients for the oats:
- 1 cup of milled/old fashioned oats
- 1 tsp of water
- 1 tsp of olive oil (optional as you can toast without)
Method:
In a non-stick pan add the above ingredients and stir. Toast on a medium heat for approx 5-7 minutes until they go golden brown. Toasting gives them the crunch factor.
Add any fruit you like and coconut or soy yoghurt. Drizzle with honey or maple syrup and passion fruit for tanginess!
For the perfect plant-based breakfast, enjoy with a Tumeric latte.
Ingredients for the Tumeric Latte:
- 2cm fresh Tumeric, peeled or 1/2 teaspoon of ground
- 2 cm fresh ginger or 1/2 teaspoon ground
- 1 cup of oat milk
- 1 tsp maple syrup
- sprinkle of cinnamon
Method:
Blend the ingredients then add to a small pan to heat through. Taste and add more syrup if you prefer. Turmeric is a medicinal herb which contains curcumin, which offers powerful anti-inflammatory and antioxidant properties. Ginger too offers anti-inflammatory benefits and make this tea a virus-fighting superstar!
