This recipe for chocolate cupcakes might be gluten-free but let me start by writing they’re not calorie-free sadly however I’ve used honey instead of sugar and high quality cocoa powder so they really are a pretty healthy treat that won’t skyrocket your blood sugar!

Makes 12 cupcakes
150 g butter
150 g honey (we like Manuka)
3 free range large eggs
1/2 tsp vanilla extract
150 g Self Raising Gluten-free flour
50 g high quality cocoa powder, sifted
5 tbsp Milk (we like lactose free or goats milk)
Double cream, whipped to serve
Strawberries (6, halved)
You will either need 12 paper cake cases.
In a medium sized bowl, mix the butter and sugar until light and fluffy.
Beat in the eggs and vanilla, then the flour, cocoa powder and milk, stirring.
Half the paper cases or pour into the cake tin and bake for 20 minutes.
Decorate with thick, whipped cream and strawberries!
