The Perfect Mother’s Day Feast from Iceland


I love Mother’s Day.

Not only do I get spoilt by my boys, I also get to spoil the number one lady in my life, my mama too!

We’re a close family and Mother’s Day usually sees us all gather together for a big meal and lots of laughter.

This year, I’m on hosting duties and as well as my parents, we’ll be joined by brother Solos and his fiancé Lucy, who recently became parents themselves to gorgeous baby Zachary. It’s going to be an incredibly special Mother’s Day.

So where will I be heading to buy Mother’s Day feast? Iceland of course!

Being a blogger, I luckily got a Mother’s Day dry run hopefully inspiring you to have the perfect Mother’s Day yourselves.

We headed to the York Iceland store on Saturday to buy everything we needed for my big day along with a weekly shop.

Then Sunday saw me waking up to freshly baked buttery croissants and pain au chocolats which my eldest son, Oliver, 6 helped Daddy prepare.

Breakfast in bed was just what the doctor ordered with my mini-masterchef taking the helm in the kitchen.

The pain au chocolates contain the most delicious, gooiest filling. They taste as if they could they could have come straight from a Parisian patisserie! Ooh la la!

I love the chic packaging too!

Pain Au Chocolate cooking instructions:

1. Preheat oven to 180 degrees C/Gas 4

2. Remove from packaging.

3. Place on a baking tray on the middle shelf of the oven and bake  for 20-22 minutes until crisp and golden brown.

I’m pleased to report that the All Butter Croissants were equally as delicious and Francophiles will be pleased to hear that they are perfectly curved – just as they should be!

Croissant cooking instructions:

1. Preheat oven to 180 degrees C/Gas 4

2. Remove from packaging.

3. Place on a baking tray on the middle shelf of the oven and bake for 16 – 18 minutes until crisp and golden brown.

And of course, no breakfast in bed is complete without a strong cup of coffee and I love Taylor’s of Harrogate Rich Italian Ground Coffee from Iceland with Hartley’s No Bits Blackcurrant Jam as a sweet addition for the buttery croissants.

A naughty but very nice way to work up! And hey…we mamas deserve it right?!

…Breakfast was of course naturally followed by a glass of fizz with the crisp and tasty Charles Montaine Champagne from Iceland. Incredible value at just £10 for a 750ml bottle.


…On the menu for lunch was an Oriental feast followed by my FAVE ever dessert: bread and butter pudding!

For main I created king prawns served with Oriental noodles and sticky jasmine rice.

I couldn’t help making lunch myself, my inner Nigella wanted to be released!

And what a incredible lunch it was-

RECIPE for the main course:

Ingredients: (all from Iceland)

Serves 2 adults & 2 children:

  • 1 tbsp of Olive Oil (using Royal warranted Lupa Olive oil from Iceland, £2.50 for 750ml)
  • Iceland Fish Market King Prawns (220g)
  • Iceland Oriental Noodles (400g)
  • Iceland Oriental Sticky Jasmine Rice (350g)


The noodles are a veggie mix which don’t require defrosting. They also include sesame oil, soya sauce, fish sauce, ginger and other natural ingredients along with a wide variety of veggies and noodles all in one bag.

So tasty and flavoursome and they make stir-fries super-simple too!

Add the veggie mix in first, cook up and then add the prawns at the end until they are heated through.

Full method below-

First, defrost your prawns either over night in a refrigerator or for 2-3 hours at room temperature.

Once fully defrosted, follow these instructions to prepare the main

1. Place wok or frying pan over a medium to high heat.

2. Add Oriental Noodles mix to the pan.

3. Stir frequently and reduce heat if necessary.

4. Stir fry for 10-12 minutes before adding defrosted prawns.

5. Stir fry for a further 3-5 minutes, remove from heat

To cook the rice, simply microwave from frozen


1. Remove outer packaging and pierce film lid several times.

2. Place onto a microwaveable plate, cook for 6 minutes.

3. Stand for 1 minute before serving.

An incredible meal for the whole family!

Now onto the course we’d all been waiting for…dessert and Iceland’s delicious Seville Orange Marmalade Bread & Butter Pudding.

Iceland Seville Orange Marmalade Bread & Butter Pudding

Utterly decadent, the pudding is made with sliced white bread and a creamy custard sauce with Seville orange marmalade and Madagascan vanilla. We popped it in the oven and it was ready 15 minutes later.

Cooking instructions

1. Pre-heat oven to 180 degrees C or Gas 6

2. Remove outer packaging and pierce film lid.

3. Place onto a baking tray near the middle of the oven.

4. 20 minutes into cooking time, remove film and return to the oven for 15 minutes Fan ( 20 minutes Gas).

Just wow!

After our lunch we headed off for a day of fun at the National Railway Museum.

Wrapped up toasty and warm we headed off to the nearby city of York where the museum is located.

As always, they were in complete awe of the old fashioned locomotives.
