Not only do I get spoilt by my boys, I also get to spoil the number one lady in my life, my mama too!
We’re a close family and Mother’s Day usually sees us all gather together for a big meal and lots of laughter.
This year, I’m on hosting duties and as well as my parents, we’ll be joined by brother Solos and his fiancé Lucy, who recently became parents themselves to gorgeous baby Zachary. It’s going to be an incredibly special Mother’s Day.
So where will I be heading to buy Mother’s Day feast? Iceland of course!

Being a blogger, I luckily got a Mother’s Day dry run hopefully inspiring you to have the perfect Mother’s Day yourselves.
We headed to the York Iceland store on Saturday to buy everything we needed for my big day along with a weekly shop.
I couldn’t help making lunch myself, my inner Nigella wanted to be released!
And what a incredible lunch it was-
RECIPE for the main course:
Ingredients: (all from Iceland)
Serves 2 adults & 2 children:
1 tbsp of Olive Oil (using Royal warranted Lupa Olive oil from Iceland, £2.50 for 750ml)
Iceland Fish Market King Prawns (220g)
Iceland Oriental Noodles (400g)
Iceland Oriental Sticky Jasmine Rice (350g)
The noodles are a veggie mix which don’t require defrosting. They also include sesame oil, soya sauce, fish sauce, ginger and other natural ingredients along with a wide variety of veggies and noodles all in one bag.
So tasty and flavoursome and they make stir-fries super-simple too!
Add the veggie mix in first, cook up and then add the prawns at the end until they are heated through.
Full method below-
First, defrost your prawns either over night in a refrigerator or for 2-3 hours at room temperature.
Once fully defrosted, follow these instructions to prepare the main
1. Place wok or frying pan over a medium to high heat.
2. Add Oriental Noodles mix to the pan.
3. Stir frequently and reduce heat if necessary.
4. Stir fry for 10-12 minutes before adding defrosted prawns.
5. Stir fry for a further 3-5 minutes, remove from heat
To cook the rice, simply microwave from frozen
1. Remove outer packaging and pierce film lid several times.
2. Place onto a microwaveable plate, cook for 6 minutes.
Utterly decadent, the pudding is made with sliced white bread and a creamy custard sauce with Seville orange marmalade and Madagascan vanilla. We popped it in the oven and it was ready 15 minutes later.
1. Pre-heat oven to 180 degrees C or Gas 6
2. Remove outer packaging and pierce film lid.
3. Place onto a baking tray near the middle of the oven.
4. 20 minutes into cooking time, remove film and return to the oven for 15 minutes Fan ( 20 minutes Gas).
After our lunch we headed off for a day of fun at the National Railway Museum.
Wrapped up toasty and warm we headed off to the nearby city of York where the museum is located.
HUGE Thomas the Tank Engine fans – both Oliver and Xander love the anything to do with trains.
As always, they were in complete awe of the old fashioned locomotives.

Then it was off to play in the museum’s kids area.
Leaving very happy with their own trains from the gift shop!
Well I did have to spoil them after my amazing breakfast in bed!
