This post was published before I became vegan.
Nothing screams summer to me than a gigantic jug of Pimms (drink responsibly, folks) enjoyed in the sunshine, snacks by my side, the kiddos splashing around in the water pool and a barbecue ideally sizzling away under the attentive gaze of my husband, Peter.
Well, that’s the dream scenario, the once in the whole of the season occurrence I hang out, dismissing the other 10 where kids are fighting, I end up wet, the BBQ ends up being a little bit burnt or it rains. Don’t you just love England!
Pre-kids, my notion of summer looked a little bit different-fun girlie holidays abroad (my head hurts just recalling them) and weekends in between uni/work spent topping up my tan in London parks mostly (it was a HARD life) before plans for more nights out after all that relaxing.
And while I don’t miss the hangovers (they’re so much rarer these days), I do miss time out in the sun just for me. A taste of the carefree days.
This summer, I’m giving myself some more ‘Mama time out moments’-and this recipe here is the ideal companion to sunshine, a pile of glossies and a glass of Pimms!

…A decadent yet healthy snack this summer, these Primula Cheese Kebabs with Pimms are EVERYTHING.
Simple, easy and super-tasty, all you need is cucumber, strawberries, watermelon, mint and Primula Cheese (original) and some skewers.
Simply chop up the fruit and veg, tear the mint and thread onto metal or wooden skewers. Then squeeze the Primula straight from the tube and enjoy!
For the Pimms I used: Pimm’s No.1 and lemonade into a jug ( 50ml Pimm’s No.1 and 100ml per glass), adding watermelon (giving it a Greek little twist), cucumber, strawberry and mint. You can add orange if you like too (I left it out as felt it was enough with the other fruit).
