Open Hallumi, & Garlic Mushrooms on Grilled Baguette Slices

Buffets and carpet picnics ROCK in this house and these mini baguette feasts are favourites with my husband and I and our kids too.

Perfect for parties too, these bites are easy to make and utterly delicious. So simple to rustle up they are simply crispy French stick slices topped with garlic fried mushrooms or squeaky Cypriot Cheese, hallumi, sliced radishes, balsamic glaze and coriander.

I have to share my Dad joke with you now:

What did the hallumi say to itself in the mirror? ‘Hallu-mi’. Haha!

Anyway, on wards! Quick to prepare and super-tasty morsels, I know you guys will simply love gobbling these beauties up!


Mushrooms on toast- (perfect for me as I’m plant-based and my youngest is dairy-free)

Serves 4

  • 1 French Baguettes/any bread of your choice
  • 2 tbsp mild olive oil
  • 350g closed cup mushrooms, sliced
  • 2 garlic cloves, finely sliced
  • knob of salted butter
  • freshly ground pepper and sea salt.

Slice the baguette and brush with olive oil. Set aside.

In a large frying pan, drizzle with olive oil and fry the garlic until golden then remove. Add the mushrooms and fry until golden and crispy.

Meanwhile, place the baguette into the oven and grill for 15 minutes by which time your mushrooms will be perfectly crisp.

Add a knob of butter to the mushrooms, place onto the toast, season with salt and pepper and enjoy.

Hallumi, radish and coriander treats-husband and eldest son’s fave!

Serves 4

  • 1 baguette
  • 1 block of hallumi, sliced
  • 1 tbsp mild olive oil
  • 4 radishes, sliced
  • 1 knob of butter
  • handful of chopped coriander
  • Drizzle of balsamic glaze
  • freshly ground pepper and sea salt

Slice the baguette and brush with olive oil. Grill in the oven for 15 minutes.

In a large griddle frying pan, add oil and fry the hallumi until golden.

Butter the baguette slices, add the hallumi, radishes, drizzle with balsamic glaze, add coriander and season.

    Yes, yes, yes. A million times yes. Halloumi is amazing grilled and I imagine the bite from the radish cuts through the creaminess of it. Super simple snack idea!
