How To Make 'Not Just For Breakfast' Super Easy Pancakes By Honest Mum

Recently, I was incredibly lucky and achieved one of my childhood dreams to present and cook on TV for ITV’s Good Morning Britain.

I come from a family of award-winning restaurateurs, so cooking has always been in my blood, my parents were often on TV as I grew up, my Dad still is today-and I even got to present for BBC2’s Food & Drink when my parents filmed for the show, aged 10, although sadly that didn’t quite make the cut!

Even as I got older and I found my calling as a successful filmmaker, I still harboured a desire to be on the other side of the camera as a presenter.

That’s one of the wonderful things about blogging. Not only has it become a rewarding career in itself, it’s also presented me with the most wonderful of opportunities.

GMB said they’d found me thanks to the blog here, and liking my On Camera page, hired me for the slots.

The whole experience was made even more wonderful by the fact my family were involved with my children and even Dad, also appearing on camera with me.

There were 3 different pieces which aired on a Monday, Tuesday and Thursday 2 weeks ago, and for this week’s #TastyTuesdays I wanted to share the recipe I made in the final slot – my super fun and easy pancakes!

Making pancakes is a lovely way to get the kids involved in making a quick but tasty breakfast or treat, together as they can help prepare and stir the ingredients for you.

INGREDIENTS (serves 6)

  • 175g plain flour (gluten-free if you prefer)
  • 1 tsp baking powder
  • pinch of salt
  • 2 free range eggs
  • 150ml milk
  • 75g melted butter
  • 2 tbsp honey or maple syrup
  • 3-4 drops of vanilla extract or seeds of vanilla pod (optional)
  • Sunflower oil for frying

My 'Not Just For Breakfast' Super Easy Pancakes

Method

In a large bowl sieve the flour, salt and baking powder.

Melt the honey and butter in the microwave for 30 seconds and in another bowl mix with the milk, vanilla extract or seeds and beat for about a minute until you have a smooth batter with no lumps.

Add 2 tablespoons of sunflower oil in a non stick pan and heat it on a medium heat until it is just smoking.

Add a few spoonfuls of batter and cook for 2 minutes on one side.

Turn over and cook for a further minute until golden brown.

Remove and repeat cooking the rest of the mixture.

Serve topped with honey and either blueberries or strawberries and Greek yoghurt on the side.
