No Bake Chocolate and Coconut Protein Bars

protein chocolate bar recipe-Honest Mum
I make these vegan and my husband uses milk protein.

protein bites-Honest Mum

8 small bars/ round bites

  • 60 grams small oats (gluten free if you like)
  • 60 grams unsweetened shredded coconut
  • 60 grams unflavoured vanilla protein powder ( Reflex Natural Whey is my husband’s favourite but I have plant-based one)
  • 1 tbsp maple syrup/honey (optional)
  • 30 grams dark chocolate (anything above 70%)
  • 30 grams virgin, raw coconut oil
  • 60 millilitres unsweetened coconut milk (you can use oat milk like me)

Place the oats into a medium mixing bowl with the shredded coconut and natural whey and mix.

Melt the chocolate and coconut oil in the microwave or over a bowl under a boiling pan of water until melted.

Pour through the oat mixture, gently stirring until all the oats are chocolatey.

Add the coconut or almond milk and process until the mixture binds.

Using a silicone bar mould, fill with the mixture.

Cover and refrigerate until firm.

If you would rather create balls than bars on a greased tray or silicone moulds, please do so.

A quick trick, I like to pop these into the freezer for 30 minutes as they set quicker!

A perfect breakfast bar on the go, snack or treat after dinner!

Ooh I will have to try these. Daughter 14, has just started her rowing season and the evening training sessions are quite grueling, especially as it’s right on grazing hour. Thanks!. I’ve linked a ‘Farm to Table’ story on this weeks #TastyTuesdays. I hope that’s okay. It does contain several ways to eat leftover ham…

These sound so yummy and easy to do, where do you get vanilla protein powder from? Thank you xx

    • honestmum

Hey hun, you will love these, I ordered the powder online and got a huge tub 2.26 kg for £46 but you can buy smaller sizes but it’s cheaper to buy the bigger one-really fab stuff, I love it in milk too, really filling x

  21. Mel

These little treats look delicious, and simple to make (much needed at the moment – I have no time whatsoever!). Where do you find vanilla protein powder? I have never heard of it. I could try and source a ‘free from’ version to make those for all of us to enjoy. Pinning it right now on my ‘free from’ board. Sorry I won’t be linking this week. Wriggly has been rather clingy and I have not managed to finish writing my recipe. xxx
