My kids love a roast with lashings of olive oil, a ton of garlic, lemon and oregano and cook!
And that’s pretty much the recipe. Don’t worry I’ve included the ingredients and method in full below but it’s so easy, that once you’ve made it, you’ll never need the recipe again! I don’t eat meat as I’m vegan but I share all recipes on the blog.
Sweet potato fries are a tasty and healthy alternative to roast potatoes-with a low GI and GL (glycemic load) they are slow releasing carbs that offer a crunchy sweetness to the lemony bite of the chicken.
Flavour is ramped up courtesy of Schwartz with oregano from their range on the chicken- and Moroccan Spice for the fries.
Together (and with a green salad too if you like), you have the perfect supper for all the family.
We like to leave this for the weekend where the chicken can cook as we play in the garden or playroom, working up an appetite for dinner-leftovers make the perfect cold chicken sandwiches with lashings of mayonnaise!
Ingredients (Serves 4)
For the chicken:
- Large, free-range and organic chicken about 1.8kg
- 1 lemon
- 4-5 garlic cloves, peeled and cut into slithers
- sea salt and freshly ground black pepper
- 2 tbsp Schwartz Oregano
- Olive oil
For the Morroccan style fries:
- 1kg sweet potatoes, peeled and sliced into chips
- 2 tbsp olive oil
- 4 tsp Schwartz Moroccan Spice Mix
Preheat the oven to 240° C, gas mark 9. Rinse and dry the chicken. Rub the chicken well with half the lemon squeezing the juice as you do. Sprinkle it with sea salt and black pepper all over as well as the cavity and then insert the lemon into the cavity.
Using a knife, create slits in the chicken (legs and breast) and add the garlic slithers in, pushing as deep as you can so they don’t protrude and burn. Sprinkle the Schwartz oregano all over the chicken and drizzle with olive oil (it will look glossy with specks of oregano sprinkles).
Put the chicken in the middle of a oven proof dish.
Pour the water over it. This will cook and create a jus/gravy.
Put the dish in the oven and roast the chicken and reduce the heat to 200° C/ gas mark 6 and cook for an 1 hour and a half or until the chicken is golden brown and tender.
While the chicken is in the oven (45 minutes before it’s ready) prepare your sweet potato fries.
Place the chips in a large bowl and drizzle with olive oil before adding the Schwartz Moroccan Spice mix, covering the sweet potatoes well. Using your fingers rub the mix into the potatoes.
Add to an oven tray ensuring they are spread out in a single layer. Add to the oven and cook for 40-45 minutes or until golden and cooked through.
When both chicken and sweet potato fries are cooked, remove from oven and serve.
