So whilst there is still natural sugar in these chocolate coconut bites with the Medjool dates and dark chocolate, they do make for a healthier, less sweet alternative to standard chocolate bars, and are no doubt, better for you than an actual Bounty bar! They should still be eaten as a treat (I say, having scoffed about 4 just today-whoops)! They are so easy to make and hit the spot when you have a sweet tooth as I do (but are trying not to indulge too much)!
Other recipes I’ve seen for similar bites use honey but I don’t personally think you need it.
My version tasted sweet enough for me and one bite with a cup of coffee makes the perfect snack. Or you know, four.
My kids love them too and my eldest had one in his lunchbox last week. The best thing, they are super quick and easy to create, taking literally minutes.
They also make a perfect DIY gift to give to others for birthdays, Valentine’s and Christmas. Heck. everyone loves chocolate and coconut (allergies aside, I can’t trust anyone who doesn’t to be fair ;)) so I’d be happy to receive these anytime, anywhere!

Makes 12-15 depending on the size of bites you create
- 2 cups large rolled, organic oats (gluten-free)
- 1/4 cup olive oil
- few drops of water
- 2 cups unsweetened, desiccated coconut
- a handful Medjool dates (depending on how sweet you like your treats)
- a few splashes of milk
- ¼ cup honey
- 115 g Dark chocolate 70% cocoa or higher
- 1/2 cup coconut oil, melted
Set oven to 300°F. In a bowl, add the oats with olive oil and some drops of water. Mix with your hands. Pour into a tray and shake flat. Toast for 15 minutes until golden then stir and keep in the oven for 5 minutes more.
Add the oats, coconut, dates, milk and honey into a blender, blending for 30 seconds. Pour into a large bowl and mix. In a bain marie or microwave, melt the chocolate and coconut oil. Create balls by squeezing not rolling the mixture (as it’s fairly dry). Then using a folk, dip into the chocolate, letting the chocolate drip from the balls and refrigerate.
Perfect bites, ideal for after exercise or breakfast on the run or with a cup of rose black leaf tea.
I’m officially obsessed with these. I also made them without the oats for more of a truffle tasting bite (below) so give those a whirl too, simply blending coconut and dates and dipping into chocolate.
