How To Make Gluten & Dairy Free Chocolate Muffins By Honest Mum

These is an easy muffin recipe you can rustle up with the kids.

These muffins are simple and quick to make.

I’ve also used maple syrup instead of processed sugar to add sweetness.

Ingredients

Makes 12 muffins

  • 250g of gluten free flour (we like Doves Farm)
  • 50g of coco powder
  • 2tsp baking powder
  • 150g vegan chocolate chips
  • 200ml coconut cream
  • 2 eggs
  • 180ml maple syrup/honey
  • 4 tbsp dairy free sunflower spread (we like Pure)
  • More Pure spread for greasing

For the topping

  • 250g plain chocolate

Method

Preheat the oven to 200°C

Sift the flour, cocoa powder and baking powder into a large bowl and also add the chocolate chips.

In a separate bowl, add the honey, eggs, coconut cream and Pure sunflower spread.

Mix both bowls together lightly.

Grease the cases with Pure.

Spoon the mixture into the cases on a baking tray. Place in the oven and bake for 20 minutes. The muffins will have risen and peaking from their cases.

Remove from the oven and cool.

For the topping, melt the chocolate in a heatproof bowl over a pan of simmering water.

When slightly thickened, spread each muffin with the icing and decorate if you wish.

    Vicki, did you post this just for me? I’m touched! LOL And now I’m hungry! These look so good, and simple. Most gluten-free recipes have so many ingredients that I haven’t worked with yet, and I’m not quite ready! This is perfect. And I don’t know what’s better Oliver’s eyes or the finished product. I caught myself feeling like I was in the kitchen with you both, I could see everything through Oliver’s expressive eyes! I love it!

      Aw not just for you lovely, but happy you liked it-we try and limit dairy and gluten as much as possible and are always rustling up vegan desserts, so glad you like this!

    These look and sound yummy, will be making these soon, just need to translate to U.S. measurements. BTW, just to clarify, the coconut cream is the fatty part of the canned coconut milk, or does it mean something else in the U.K.?
