Honest Mum's Crunchy Coleslaw recipe

I love that my youngest is always up for trying new textures and tastes. He lapped this up!

Coleslaw recipe made with Greek yoghurt

Ingredients:

  • 400g white cabbage
  • 1 whole red onion
  • 2 spring onions
  • 2 medium carrots
  • Handful of parsley/coriander for a twist
  • 250ml Greek yoghurt
  • 2 tbsp full fat mayonnaise
  • drizle of Extra Virgin Olive Oil
  • 1/2 fresh lemon or lime
  • 2 tbsp grainy mustard
  • sprinkle of sea salt
  • freshly ground pepper
  • a sprinkle of chilli flakes (my kids prefer without so made here like that but my husband likes it with lots as well as a dash of Tabasco for extra heat.

Vicki Psarias Coleslaw recipe

Method:

Finely slice the white cabbage, red onions and spring onions. Grate the carrots. Finely chop the parsley. Add to a medium sized serving bowl. In another bowl mix the yogurt, mayonnaise, oil. lemon and mustard and add to the veg mix. Season with salt and pepper.
