Crunchy Coleslaw Recipe. Great as a side with BBQs or in a picnic, you can even use dairy-free mayo if you prefer. This coleslaw is so good, you’ll keep coming back to this recipe again and again!

Ingredients:
- 400g white cabbage
- 1 whole red onion
- 2 spring onions
- 2 medium carrots
- Handful of parsley/coriander for a twist
- 250ml Greek yoghurt
- 2 tbsp full fat mayonnaise
- drizle of Extra Virgin Olive Oil
- 1/2 fresh lemon or lime
- 2 tbsp grainy mustard
- sprinkle of sea salt
- freshly ground pepper
- a sprinkle of chilli flakes (my kids prefer without so made here like that but my husband likes it with lots as well as a dash of Tabasco for extra heat.
Method:
Finely slice the white cabbage, red onions and spring onions. Grate the carrots. Finely chop the parsley. Add to a medium sized serving bowl. In another bowl mix the yogurt, mayonnaise, oil. lemon and mustard and add to the veg mix. Season with salt and pepper. Quick and easy, I know you will love this yummy coleslaw!
