I love Mother's Day.
I don't fall for the 'I don't like Valentine's Day because it's too commercialised' kind of statements-I fittingly love, LOVE, LOVE it! Why? Because it's a day to celebrate love whether that's romantic or otherwise and no one can have too much love (or red roses) can they?!
Tzatziki is a healthy, refreshing dip mostly served as meze (part of several Greek courses) using crusty bread or pitta bread to dip in but it can be enjoyed alone as a snack.
Within the gorgeous gift bag I left with after the wonderful dinner with Antonio Carluccio himself a few weeks ago, were the ingredients to recreate his exquisite pappardelle al funghi-so I gave it a whirl at home. I hope you love it as much as we do!

We are mostly 'gluten-freers' here but we do sometimes enjoy a slice or two of this garlic pizza bread with tomato as a starter at my brother's incredible Italian restaurant in Leeds, Giorgio's. The great chefs there, rustled this up and my husband Peter took the photographs. I was chief taster and compiler of the recipe here. It's a hard job but someone's got to do it!
