Sharing family favourite: garlic chicken tray bake!
Plants are the way forward for health, and this year I want to fill my diet with lots more of them. I'm still eating good quality meat just not tons of it and I'm concentrating on food that makes me feel good. We adore rice here and a tasty risotto ...
My husband Peter and I both love Japanese food. Pre-kids, we regularly dined out in our local Japanese restaurant and even now it is still one of our favourite date night cuisines, but unfortunately with two sons under the age of 6 we don't get to enjoy it as much as we would like. The solution? Make our own! And this beautiful sesame crusted tuna is as delicious as any restaurant dish I've ever tasted!
This fragrant, healthy and vegan dish is one of my favourites-perfect in all seasons, I use seasonal vegetables and the chilli kick really gives it warmth and bite. Easy to assemble, this is ready quickly and the kids too gobble it up (sans chilli)!
I try to eat vegan several times a week. Earlier this year, I embraced a full time vegan diet for just over a month and felt amazing as a result.
Peter, my husband is utterly obsessed with Thai food and although I can't eat the nut sauces in many of the dishes I do love how fresh, fragrant and flavoursome Thai is.
I LOVE pasta, but following a low-GI diet and gluten-free most of the time (sadly pasta doesn't love me back), I very rarely indulge on the Italian staple. As an alternative, I'm a huge fan of making courgetti, a dish that has really taken off over the past year and it's easy to see why! Nutritious and delicious, it's also super easy to make too. Adored by the likes of Beyonce and Victoria Beckham, Kale is a foodie fave du jour. Rumour has it even McDonalds is even 'lovin' it' and plans to add kale to its menu in the not too distant future (McKale perhaps..?).
As a low-carber and someone determined to get back on track after a summer of indulgence (2 weeks back on the wagon and so far, so good), I love sharing tasty, high protein and most importantly- easy to create dishes at home.
If you caught my earlier post you'll know it's back to healthy eating for me after a summer of indulgence so I'm kicking things off with Grilled Salmon & Blanched Asparagus.
