Simple to make, I love cooking these baked stuffed apples for the kids as a healthy dessert or daytime snack.
Easy to rustle up, you can stuff the apples with anything you fancy. Enjoy!
60g granulated sugar
1 teaspoon of cinnamon
1 tablespoon sunflower oil/softened unsalted butter
8 large cooking apples, cored and left whole
Preheat the oven to 190°C, gas mark 5. In a bowl, mix the sugar, cinammon, sunflower oil or butter and sultanas. Stuff the centre of the apples with the mixture and place the apples upright on a baking tray. Pour 250ml of water around the apples. Place the tray in the middle shelves of the oven and cook for 20-25 minutes, basting from time to time until the apples are soft right through when tested with a skewer.
Serve hot or cold with thick Greek yoghurt.
